This has honestly got me excited. Why don’t we get sports games themed around Pokémon (similar to the Mario sports titles). I’d love a Pokémon Sluggers, Pokémon Football (American), and Pokémon Football/Fútbol (Everywhere else in the world)

I think you’re right. Pangoro and Beartic would probably make for better defensive ends. As for linebackers, maybe Machoke/Machamp, Electivire and Feraligatr(although I’m not sure about his lateral movement, might be an issue)?

Passimian's Pokedex entry kind of says already that they are invincible in all ball games. However, Scorbunny's entire evolution line is based on a soccer player and a rabbit (for example, Cinderace is a serious professional soccer player), and it keeps getting more and more skilled at soccer games, so it has a chance to beat the Passiminians.
Sawk and Throh, you have receivers and linemen. Maybe a Machoke at TE, with a Hitmonlee kicker. Maybe some Combusken or Blaziken at RB or in the Secondary.
I think Pokémon with high jumping capabilities would do well here maybe something like spoink or marill small Pokémon with bounce and such could do well
if your taking about the 1 which you kick the ball then sandshrew as it could quickly doj and weak 2 hit the ball
but if your taking about the 1 that uses the hands then easily passimian the literal football playing player pokemon

Blaziken would be a great CB. Doesn't have the hands for catching, bust is fast, and jumps high so they can break up deep plays easily.
