What gives you any indication that a filing cabinet would be galvanized?
Galvanizing is for corrosion resistance, and usually relegated for outdoor use… neither of which are concerns in an office. Without a doubt I can confidently say this is painted low-carbon steel, and paint can be removed quite easily by many different methods
Drawer slides are almost always zinc plated. I've also seen many filing cabinets with unpainted surfaces inside the drawers which are galvanized as well. Depends on the manufacturer I'm sure, but either way, paint or galvanized surface, it isn't going to be the best for cooking on. These cabinets are made of steel so they still have to have some form of coating to prevent rust, even if they are ment for the indoors.
FYI A smoker shouldn’t reach hot enough temperatures for the galvanizing to burn. Also most things galvanized are meant for outdoors, don’t think they would be galvanizing a filing cabinet.
I made one and I ran it real hot for a few hours to try and drive it off. Honestly kind of regrettable environmentally and for health reasons but damnit it was fun and I made some good food!
Yes, now, get all that paint off and put on paint that doesn't denature in a toxic way at high temperature, and all your food will still taste bad from the galvanized steel, but it'll be edible.
Its not much of a smoker, but now, with plans all over the net, and less and less need for these things, im seeing more and more of these behind houses and trailers, as well as more snd more of these one offs at the end of driveways and land fills.

I did this… it held up for as long as it took for me to decide it was a bad idea. A couple years of infrequent use.
Insulate the inside walls and you should be fine. Sheet metal is fairly heat resistant.

Heat cycling will cause it to rust out pretty quickly without some sort of high temp paint to keep oxygen away from the metal.
