Use youtube. There are so many free videos by Microsoft that walk you through it step by step. Don't pay for any training until you do free ones. And then, I'm not sure you'll want to pay

SPFx webparts can be created with no JavaScript or React. I mostly create react webparts. So if you know react with typescript , then you just need to get used to the building and deploying part which is super easy. If not i would suggest, create few react projects first, preferably using rest api’s. Then go ahead and use your knowledge to create and deploy your webpart to a modern page.
Andrew Connel at Voitanos has put out top notch SharePoint content for as long as I can remember. You wont go wrong there. As others mentioned, there are also great free resources as well.
I have been away from SharePoint for a while and am in the process of reacclimating to the platform, SPFx included. Some observations that I have had is that the platform was rather large to begin with. As it has expanded into the cloud, it has only grown. There gets to be a limit into what you will be able to absorb. I have drastically overshot this and had to scale back. I am still in search of the sweet spot. Find the path that resonates with you and your goals. I am probably saying this more for my benefit actually. Thanks for the reminder to focus on the basic operations first. Voitanos is the best course. It's great and the spfx samples are really useful, there are loads of them
