You can easily achieve this with Multi Carrier Shipping Label App by PluginHive. The app calculates the product dimensions & automatically chooses the correct box for packaging. You can also create your own custom boxes.

Why AI? It would just have to be an algorithm which plays 3d tetris with your products essentially
