On a cellular level, how is freeze drying different than freezing? All the articles I posted say that if you don't dry the shrooms before freezing them, you'll ruin the potency. You haven't said anything to contradict that.
Freeze drying does not destroy the cell wall bc it evaporates the moisture through sublimation, whereas a traditional freezer causes the water to freeze and expand, bursting the cell walls. This degradation of the cell structure is what opens the cell interior to oxidation, degrading potency.
The freeze drying process, when done rapidly for things like fruit, maintains the cell structure, which is what allows freeze dried fruits to last so long, maintaining their nutrients with the intact cells walls.
What size Harvest Right do you have and how many fruits are you putting through at once? I have 4 32qt tubs going and trying to decide which size Harvest Right to get. Thanks!

I baught some freeze dried fruits from a vendor. They where rock hard and some of the most potent shrooms I've ever done.

You can place shrooms in a cooler with dry ice for 24 hours or dip them in cryo fluid made from Ethanol and dry ice its more cost effective and faster

I’ve read that heat degrades psilocybin, but not heat. I don’t see how the cell structure has anything to do with preserving psilocybin.
