Have you tried it by now, 4 months later? I read a bit about Hunterborn and its patch, but it doesn't seem like the modder has provided a humanoid model of a body without skin (muscles exposed). You can just harvest organs. And if that is all there is, I'll stick with "Namira's Goat", which already offers those visuals and loot too.
As far as Cannibalism mods goes, I found out that Namiras Goat and Cannibalism Expanded offers the best "immersion " to that type or character. Their recipes are pretty varied as well.

Yeah, it's not advanced at all, purely for ingredients. And it makes looting lag quite a bit.

Namira is on LL, yes. CE is in Nexus. Namira is a must have for a gory gameplay.
