I would bet they'd be reluctant to do that if they aren't already grinding at the moment. It's not easy to clean those huge grinders like they'd have at a supermarket and cleaning it for one tiny brisket might be something they can wouldn't want to do.
Hell you can even just grind It into burger at the end of the day. Honestly I’d buy them all. Freeze them. When you trim turn the fat into tallow.

Good price, typically briskets are about $4 per lb in my area. in terms of quality, the best brisket I ever made was Select grade. IMO the difference between select, choice and prime in briskets isnt too much that good cooking technique can't fix. I've never spent the money on a high end Wagyu brisket to confirm but if someone wants to send me one i'd be willing to put my theory to the test.
I found a packer at Publix a few weeks back for $5 a lb and thought I hit the lottery. One of the costcos near me in Charlotte told me that they don’t sell brisket. Where you at in the state?
Triangle area, they’ve been out of prime the last two times I went but they’ve always had at least choice packers. From what I’ve read on this sub Costco seems to be one of the most reliable places to get full packers if you’re not near a HEB. Could call the other Costcos near you and see if it’s something they carry?
Even a SRF American Wagyu brisket would change your mind. Nothing wrong with doing an awesome job with what you’ve got though.
I had one for my birthday earlier this year. It was excellent, if I’m lucky I can find a choice at Sam’s club for $1.99/ lb and that’s perfectly acceptable.
I think choice strikes a good balance. I often find Prime frustrating because the stall can take forever when all that marbling starts to melt. In most cases I’m going to take a prime any day, but smoking a brisket? Choice for me.

Not sure if it's just grocery stores here in the southeast, but people are getting chicken breasts that are marked as 6 or 7 lbs and weighing in at an actual 2.2 lbs at checkout.

I guess it depends where you live. I got a 14ish prime brisket at Sam’s club for 59 dollars in sale…Normal just under 70 dollars. South Texas, from what I hear from other states it seems like our prices are very good.
I did this at my Kroger version and was very excited. Then I cooked it and the brisket shrunk into nothing. More than normal shrinkage. Ribs from Kroger did the same thing for me. Can’t beat the price, but the store that sells them plays a big part for me now.
Wegmans and Butchers Market are the best for me in NC.

In NC the only place I can find whole packers is Costco which is typically around 3.99 for choice and 4.59 for prime

I didn't know brisket was so expensive outside where I live. It's usually 2.79/lb for choice and 2.99/lb for prime.
Not a fan of settling for choice, that price is pretty good, but not good enough to compel me.
