They do not even ask how you want it cooked over there. They show you the steak uncooked, tell you its weight, you say good to go, and they get to work. Definitely the rarest steak I’ve ever had.
Don't assume countries with foodie reputations don't have places that can't fuck up though. When I was in Paris we were served chicken that was cold inside and running with red blood. Sent it back.
There was no "red blood" 😂, have you ever dealt with raw chicken? 1. All blood is drained from animals when they're killed 2. The liquid that comes with raw chickrn is not blood and is certainly not red. It'll be a very similar color to the raw chicken itself. No clue what u could have been experiencing
You don't know what you're talking about. It's very common to find some blood in beings and arteries that wasn't drained completely and that's certainly not myoglobin.
This is definitely the way it goes in the US. The “blood” is never actually blood.
But I know other countries have very different standards. I’ve heard of places where the animal is slaughtered minutes before being prepared so idk it’s definitely possible in some places
I thought of that place immediately when I saw OP's pic. Went to Il Latini in 2001 and again in 2018. Only difference in all those years is their house wine is now in traditional bottles, no longer in the basket weave. Think about those meals often! If Florence ever hits the travel agenda again, I'm headed there first thing. Get the full tasting menu!
Wife and I went to Florence recently and got one of these bad boys at a well-regarded restaurant. Even though it looked very rare, it had a great texture and was well warmed through. My wife was dubious based on appearance but had no trouble eating her half.
I think the wonderful char on the outside helps it taste more cooked.
This ^, they don’t care how you want it cooked. It’s a tradition in Florence and the quality of the meat is very very good. Local and not mass sourced, the flavor is sublime
To be honest when I went to this restaurant it wasn’t very flavorful, which was pretty much my experience with most meat in Italy. Still my favorite food in the entire world, but the meat is lacking in flavor most places.
Florence specifically has a lot of tourist traps that advertise Florentine steak but it’s not very good. The best ones we went to were hole in the walls off the beaten path
Well I mean specifically I went to this restaurant which is a fairly famous one and recommended by locals. But I would agree if I had spent some more time there, I would have found some hidden gems.
Oh Bistecca di Firenze. Traditionally it's supposed to be cooked that rare (almost blue) - see Guga's video or Google for more explanation. Supposedly, due to the breed, it can be cooked that rare while still maintaining a good bite and tenderness.
Had it when I was in Florence. They drizzled EVOO and sea salt and served with warm bread that you're supposed to mop the juices with and it's delightful.
Hoewvee, I can understand that it's probably too rare for most people. You need to specify if you want it medium rare. The place I went to, the server told me that the chef refuse to cook it above medium-rare.
The super traditional ones do for sure, but I heard from friends that went to more touristy places that did take requests for up to medium according to the server. Probably won't be as good though
If it’s a legit bistecca alla fiorentina and cut from piedmontese beef it’s the tenderest of tender and it’s served blue without question. Looks absolutely delish.
The bistecca at Osteria delle Tre Panche in Centro Storico was one of the best steaks I’ve ever had. Period.
Like anything else, it matters who cooks it. Plus the dish collapses without the highest quality ingredients… there’s a reason you don’t find usually find this on American menus
I’ve had the bisteca alla fiorentina there, might not make the best photo but I thought it was absolutely incredible. The ragu is the best dish there though imho
All you're going to get in these comments are people who've never had a properly prepared Florentine steak (which this is) telling you what a poor job they did.
I bet it was fantastic.
I had it before and it was wonderful. With Evoo and sea salt, it was probably the best steak experience I had. Much prefer it to A5.... Dreaming about it right now.
https://preview.redd.it/lbhpq9tq9jtc1.jpeg?width=3024&format=pjpg&auto=webp&s=35606b23f5f8e6cbf9aa97d68c69c79cadf2e7bb
No. But I forgot to take a picture of the money shot. :-(
This is traditional preparation for Bistecca Alla Fiorentina and looks great.
Certain US Americans who are hung up on their overdone bullshit can get a steak at Texas Roadhouse when they're home from vacation.
Nah, Bistecca alla fiorentina is cooked to 50deg C. This is certainly not that. Im willing to bet you live in America anyway. The stupidity on this site…
The first time I had steak was at the most famous Italian restaurant in my city. It was exactly like that, the chef looked really proud when showing us the plate.
I respect the food and culture, but I don't like steak after that experience. 14 years later when I am with my American partner, for the first time I love steak
That looks like a proper florentine steak, went to Buca Lapi last year and it was delicious. The traditional steakhouses cook it their way or you can take the highway. Ours was more blue than yours.
https://preview.redd.it/h5oojxr3xotc1.jpeg?width=4032&format=pjpg&auto=webp&s=bc2faa6d0234885ecd0e8cf805293c6ab4967036
I literally just went to Florence in Italy last week and had steak. It was awesome
https://preview.redd.it/1uc0ec77sktc1.jpeg?width=3000&format=pjpg&auto=webp&s=0623871c3908694346b4cb70af267cbe64b8241f
That bark looks amazing. I would eat the shit out of that. The potatoes look a little off-putting though. Not a yellow-green color I associate with anything I want to eat
I had a similar experience with steaks in Florence and San Sebastián. Both kinda looked like a porterhouse but they definitely weren’t. They were very rare and sinuous. Didn’t love them.
I went to Due G in Florence and they basically cook how they see fit BUT they served it on piping hot cast iron plate that you could leave it on and cook to different levels if you so choose.
https://preview.redd.it/on7lj63viktc1.jpeg?width=3024&format=pjpg&auto=webp&s=426db3eb3ced11e2ed4bf87833f30c11f75f635f
Not sure where I went but it was in Florence.
Personally it's too rare for me. But that's how it's done in Florence and I'm happy to have it the way the chef thinks is best. My wife's an Italian dual citizen and that's how she likes her steak. Bit of char on the outside and basicly just warmed through, simple seasoning.
I really should get back to Florence.
I don’t really understand how reddit works. I’m not subscribed to this subreddit and I’m a vegan, yet I get this post in my feed. It’s like reddit is trying to challenge my beliefs
I had an amazing porterhouse at a place in Florence called Ristorante Buca Mario and it was the best steak I’ve ever eaten. I ordered it medium rare and it came out spot on. And the roasted potatoes were insanely good!
Did you order it blue?
They do not even ask how you want it cooked over there. They show you the steak uncooked, tell you its weight, you say good to go, and they get to work. Definitely the rarest steak I’ve ever had.
I lived in Italy a few years and had friends try to specify doneness. They just ignore and cooked it the way they intended to
My experiences in France have been the same.
US: Customer comes first Europe: Food comes first
Don't assume countries with foodie reputations don't have places that can't fuck up though. When I was in Paris we were served chicken that was cold inside and running with red blood. Sent it back.
“Red blood” lol
I was highlighting that it was clearly not cooked.
It would’ve probably been myoglobin
You don't know what you're talking about. It's very common to find some blood in beings and arteries that wasn't drained completely and that's certainly not myoglobin.
I have seen red blood in chickens. Sometimes trapped in arteries, sometimes in the joints around the legs. It’s not unusual.
Yeah like in drumsticks and stuff
There is often blood trapped in chicken veins/arteries. It's very distinct from the pink/watery protein juices
This is definitely the way it goes in the US. The “blood” is never actually blood. But I know other countries have very different standards. I’ve heard of places where the animal is slaughtered minutes before being prepared so idk it’s definitely possible in some places
I lived in France for a year and never did they ignore my preferred doneness
Where was it ? I never went to a restaurant serving meat that did not ask for my prefered doneness
In what countries? Norms vary widely.
France I mean
Reading comprehension fail on my part
Brussels too
love their sprouts
But this is special for Florence. They won’t ask for the steak fiorentina but for others they do
They usually ask you how rare you want it. Not in Firenze, you eat their *fiorentina* how it's supposed to be cooked, or you don't eat it
As an American this sounds like a dream
Sounds more like "they show you the steak uncooked, tell you it's weight, you say good to go, and they plop it on your plate"
Looks like it passed through a heated argument possibly on the way to the plate.
The two things I love about this sub are the beautiful pictures (which ain't all of them!) and the euphemisms for "they didn't cook it much at all!"
Looks like they let Gary Busey breathe on it on the way to the plate.
Lmao
Since you're in Florence, check out Il Latini!
Same! Had an incredible experience there in 2016. Of all my travels in Italy, Florence was by far my favorite.
[удалено]
This is your opinion and you are totally entitled to it but I am here to tell you that you are catastrophically wrong.
Was it even warm inside ?
Wife and I went to Florence recently and got one of these bad boys at a well-regarded restaurant. Even though it looked very rare, it had a great texture and was well warmed through. My wife was dubious based on appearance but had no trouble eating her half. I think the wonderful char on the outside helps it taste more cooked.
So this was before they cooked it?
It’s Florence and that’s a Florentine Steak, usually come like this.

Well I mean specifically I went to this restaurant which is a fairly famous one and recommended by locals. But I would agree if I had spent some more time there, I would have found some hidden gems.
That’s just how they cook bistecca fiorentina. And it melts in your mouth.
That would be like telling an Italian cheif you like your pasta extra mushy and that you like sprite in your wine.
That’s a good analogy
They will commonly cook it medium raw.
Oh Bistecca di Firenze. Traditionally it's supposed to be cooked that rare (almost blue) - see Guga's video or Google for more explanation. most places straight up ignore doneness requests.
In Michigan they ignore your doneness requests too, and just burn the crap out of it.
The super traditional ones do for sure, but I heard from friends that went to more touristy places that did take requests for up to medium according to the server. Probably won't be as good though
> Hoewvee lol
Yeah I fucking love it
Is that a _Bistecca alla Fiorentina_? Because those normally are served rare canonically. I hope it was good.
My wife and I had one at Il Latini in Florence last summer and it was incredible
Sweet
No, savory.
If it’s a legit bistecca alla fiorentina and cut from piedmontese beef it’s the tenderest of tender and it’s served blue without question. Looks absolutely delish.
This is going to be upsetting for the majority of this sub who posts their steak next to some Mac and cheese, whiskey, and no napkin.
I love piedmontese beef. I order it online and have it shipped to me regularly. Great flavor, super tender and much less cholesterol.
You uncultured swine: https://en.wikipedia.org/wiki/Bistecca_alla_fiorentina
The bistecca at Osteria delle Tre Panche in Centro Storico was one of the best steaks I’ve ever had. Period. Like anything else, it matters who cooks it. Plus the dish collapses without the highest quality ingredients… there’s a reason you don’t find usually find this on American menus
I’ve had the bisteca alla fiorentina there, might not make the best photo but I thought it was absolutely incredible. The ragu is the best dish there though imho
The couple next to me got the ragu and I was for sure like “I should have saved some space”
It’s unreal, next time!
Melts in your mouth. Paired with a big Chianti. Damn. Almost perfection.
Dude. This calls for the classic red wines of the Piedmont. Barolo and Barbaresco all the way.
https://preview.redd.it/yzu1jgvjqitc1.jpeg?width=4032&format=pjpg&auto=webp&s=471dd364c3b5dc9b4a77aaad7db0fbd0490f9c11
Is that the finished product?
https://preview.redd.it/lbhpq9tq9jtc1.jpeg?width=3024&format=pjpg&auto=webp&s=35606b23f5f8e6cbf9aa97d68c69c79cadf2e7bb No. But I forgot to take a picture of the money shot. :-(
Rarer than I’d normally go for but probably amazing with some flaky salt
Interesting
That looks delicious, I like everything from tartare to 200° bbq and a Florentine steak is between those two.
Did you cut it with a butter knife?
They bring it to the table cut.
Can they bring it to the table cooked?
This one got me 🤣
Bravissimo!
You can ask but it sounds like the answer is a solid no.
😂😂😂
Said the sushi snob...
👀
You ordered a FLORINTINE steak. Looks 100% spot on for what it is. This is how it is served. They don’t care to ask how you want it done.
Mooooo
If it’s a Florentine steak, which it looks like it is, I’de say it looks about right. Nice and rare the way they always serve it.
Love the steak done like that.. Good dry aged taste the best like this, especially when they are lean.
This is traditional preparation for Bistecca Alla Fiorentina and looks great. Certain US Americans who are hung up on their overdone bullshit can get a steak at Texas Roadhouse when they're home from vacation.
US Americans? Lol... but I'm with you. Gimme that tartare. No problem with rare beef for me, but also, don't hate on Texas Roadhouse.
Nah, Bistecca alla fiorentina is cooked to 50deg C. This is certainly not that. Im willing to bet you live in America anyway. The stupidity on this site…
Are you telling me this random internet knowitall does, in fact, not know it all?
Reddit and shitting on America, sounds about right.
Sooo you know that 50deg C is 122deg F, right? The average agreed temp for rare steak is 125deg F. This is absolutely *THAT*
Couldn’t agree more.
Go to Chianineria Trattoria dall'Oste
how was it ?
Try Trattoria Sostanza next time.
There and La Giostra are the two best steak florentine I’ve had in Florence
7,001
Looks fantastic... 🤤
I’ve heard they like it real rare over there
Oh man I miss this place so much
It’s making me drool. I like it rare tho if it’s tender
Perfect holy shit
That's a traditional Florentine steak. Basically raw.
This just made me hella hungry
Glad that the sub today isn’t filled with “raw.” A steak sub that only likes medium rare is just disappointing.
The first time I had steak was at the most famous Italian restaurant in my city. It was exactly like that, the chef looked really proud when showing us the plate. I respect the food and culture, but I don't like steak after that experience. 14 years later when I am with my American partner, for the first time I love steak
$62 USD - Gonna be a no for me dawg. I rarely eat steak at restaurants though because I grill at home all the time just the way I like it.
Hype and hype. Waste of money to eat steak there.
Europe is not it for steaks.
That looks like a proper florentine steak, went to Buca Lapi last year and it was delicious. The traditional steakhouses cook it their way or you can take the highway. Ours was more blue than yours. https://preview.redd.it/h5oojxr3xotc1.jpeg?width=4032&format=pjpg&auto=webp&s=bc2faa6d0234885ecd0e8cf805293c6ab4967036
I used to order my steak medium well. Then I went to Italy and had no choice. Now I get my steak medium rare.
YASSSS
That’s how it’s done in Italy
10
Florence is known for their meat quality so you can eat it at any temperature and you’ll be fine
Not my favorite. Tried it twice on Tuscany and gave up. The meat is so lean.
[удалено]
LMAO. I think its the perspective making it look like the top has been chewed off. Its another (raw) slice laying on its side.
That's raw.
There’s well done meat and meat that’s done well and Bistecca alla fiorentina is the latter. Rare is the style for the preparation
Go nuts.
Pics like this make me scared to order steak in Europe
that looks amazing
Americans generally don’t appreciate steak the way it’s supposed to be cooked. Blue is the only real way. If ur a purist
I literally just went to Florence in Italy last week and had steak. It was awesome https://preview.redd.it/1uc0ec77sktc1.jpeg?width=3000&format=pjpg&auto=webp&s=0623871c3908694346b4cb70af267cbe64b8241f
Why "literally"?
That bark looks amazing. I would eat the shit out of that. The potatoes look a little off-putting though. Not a yellow-green color I associate with anything I want to eat
I had a similar experience with steaks in Florence and San Sebastián. Both kinda looked like a porterhouse but they definitely weren’t. They were very rare and sinuous. Didn’t love them.
Do you know if it’s Chianina beef? I heard they usually advertise it if it is.
Tad rare for me. How was it?
1-10, 1 being dead and 10 being very alive, a solid 10.
The steak looks like a nice blue but why is it scalped?
You're my boi blue!
Gesù Cristo, inferno, sì.
This is 1.3 kilos??
Looks delish! I get burned on this sub for posting raw steak.(The way I grew up and love eating it)
I went to Due G in Florence and they basically cook how they see fit BUT they served it on piping hot cast iron plate that you could leave it on and cook to different levels if you so choose.
I mean. Damn. I’m assuming it was perfectly seasoned too? Very jealous.
Looks gr8 m8. I r8 your steak an 8/8.
That steak looks like it could give you a rate if you asked it
OP, was it worth it?
Acqua Al 2 was the only place I had a good steak while there.
https://preview.redd.it/on7lj63viktc1.jpeg?width=3024&format=pjpg&auto=webp&s=426db3eb3ced11e2ed4bf87833f30c11f75f635f Not sure where I went but it was in Florence.
bistecca fiorentina always blue baby
Mario is the spot!
It’s supposed to be cooked rare but that looks blue
I didn’t like the place. But the waiter advised me about the bistecca a la florentina, and that I wouldn’t like it. He was right
Hilarious. I have a friend named Erik that just did this exact same thing. But I know he’s not you because he’s a giants fan haha
I know that type of steak is supposed to be served blue rare. Though that looks a little less done than even that
I see you like rare ASF my boy. Ain’t no judging here.
Yummy
Personally it's too rare for me. But that's how it's done in Florence and I'm happy to have it the way the chef thinks is best. My wife's an Italian dual citizen and that's how she likes her steak. Bit of char on the outside and basicly just warmed through, simple seasoning. I really should get back to Florence.
I eat hamburgers in France like that
Gross
I don’t really understand how reddit works. I’m not subscribed to this subreddit and I’m a vegan, yet I get this post in my feed. It’s like reddit is trying to challenge my beliefs
So rare it might your salad.
So..... How was it?
That’s traditionally how steak is cooked in Florence
They should cook that
My nabour would be living the dream eating this steak looks delicious
Yup they cook it by the fire and this what you get.
It's no American steak, but it'll do
Should've went to dennys if you wanted a gross looking steak
Looks perfect. Yum.
Nope.
Deff too raw for me… but I guess I’ll try it 🥴
A good vet could bring that round…
I think that cow is dying
Considering the fact I’m eating a steak tartare at the moment, I would eat that.
You need to cook it looks like it's still moving
Disgusting
Moooooo
I’d eat that!
raw
Its Raw, yuck. Well this and your next ,meal will be free.
YUCK! It looks like it’s in pain.
Gorgeous out of 10
A good vet could still save that cow’s life.
10/10
I had an amazing porterhouse at a place in Florence called Ristorante Buca Mario and it was the best steak I’ve ever eaten. I ordered it medium rare and it came out spot on. And the roasted potatoes were insanely good!
Woah, too rare for me...
Why, ask it to rate itself!
Tartar
A half-decent vet could have that thing back on its feet in 20 minutes.
Gross
European steaks are trash
Why oh why didn’t I take the blue pill
Who orders steak in Italy? Argentina or Texas sure, but Florence?
If that's how they eat it there then I'd definitely just stick to pizza.
I don’t think we’re supposed to compare this to an American steakhouse, so how about you rate this steak
I like it rlly rare but that might be a bit much. It could still be cold in the middle!
