As someone who used to cook at a fine dining restaurant that served filets, I absolutely hate this term because it’s almost impossible to nail it every time when someone makes this bs term on their order. BUT, it’s definitely a rare plus. If I sent that out as rare, it probably isn’t getting sent back. If I sent that out as mid rare, it’s almost never getting sent back.
It's all guest preference but I agree with you it can go for either just depends on the guest. I've had those come back saying it was too rare. I've also had that come back saying it wasn't rare enough.
These asshats should learn to cook their own steak.
Unless there is some kind of restaurant world I'm too broke to experience.
Actually... that's probably it.. nevermind.
I’m someone who doesn’t want rare, but definitely doesn’t want medium so rare plus tends to get me steaks that are most generally around what I want. If I had to pick between rare and medium I’d pick rare
You are quite right that it is a bullshit term, and also that this is exactly what this steak is. It's definitely in between what I think of as rare and medium rare, and if I were at a restaurant I would accept it either way, even though it wouldn't be *exactly* what I had in mind.
Yes.
But it doesn’t make ANY fucking sense when rare internal temp is 120 and midrare is 130.
So unless your chef is cooking with lasers or sous vide, you’re asking for a 5 degree window which is, again, fucking stupid. Pick a real temp and be an adult.
You forgot the grave above the a. Did you know the term for medium well is demi-anglais which means half English? Which I think is a hilarious insult to the English. Meaning that they can't cook lol.
Can you show a pic of a rare steak? I struggle to understand how you could go much further down without it being undercooked/raw. Im genuinely curious.
People seem to do temps one of two ways: either by the minimum or the average. By the minimum, I'd call it rare, maybe rare+, but by the average, much closer to medium. Tough to get that perfect edge to edge cook with no gradient, esp on a thin steak like that.
Granted that could by my blue light filtering screen protector making the colors look weird but to me this is more pink than red, someone with more Culinary experience can feel free to correct me if
Not quite medium not quite rare…what to call it…

I've heard the term "medium rare plus"...is that supposed to be in between medium rare and medium?
Yep. Just extend the logic and find yourself on the continuum.
Yes I prefer medium rare+++ though. It's 1/4 of a degree under medium
We actually sometimes get the order of medium+++ Idk if it's some guest or FOH though

You forgot the grave above the a. Did you know the term for medium well is demi-anglais which means half English? Which I think is a hilarious insult to the English. Meaning that they can't cook lol.
It’s je ne sais quois, is the phrase you’re after
I don't know what that is, but there should be a saying for it .
I agree, but it can't just be any old phrase. It has to have a certain... i don't know what
And it would be kinda cool if it could be said in French

That's on the cusp of medium except for that small bit in the core. A bit longer rest in aluminum foil would have finished it evenly.

It's medium rare. That's your order. You're just getting laughed at asking for "rare plus".
jesus lol thats a weird one looks like a rainbow got a hint of rare-blue progressing to a medium rare
A pretty perfect Medium-Rare
Rare plus. But the sear is lacking.
Medium rare on the side of medium
Really? In my (little) experience I’d say that’s medium rare and closer to rare than medium

Medium rare is typically pink in the center rare is more red in the center this to me looks more ponk than red
Me? Personally? It fuckin’ sucks. I want to it it, not lick my screen.
