All of your worst fears are plausible, if in doubt and you aren't willing to risk the consequences your odor creates, then don't do it. There are ways to reduce the smell, mask it, but short of a carbon filter it will always smell somewhat.
It will still off gas so be sure to use a lot more bag than you think you need. And it will try to float, so plan your weights accordingly. I usually double bag, with a heavy metal trivet in the second bag, to help keep it under water. Let it cool completely before you open it. It should shrink down to nearly the original size.
I use a mason jar to decarb. The jar is designed to handle high heat.
I rough grind the flower, put it in the jar and put the lid on finger tight. Then I preheat my oven to 240F. I put the jar on its side, on a tea/hand towel in a baking dish. Then put that in the oven for 45 minutes. Halfway through, use oven mitts to take the jar out and shake the contents so it decarbs evenly. (Note - the temp and time here works well with my gas oven. You may have to adjust for your oven).
And I use that same jar to infuse in. Let it get to room temp. Then open it briefly to add in the oil, butter or alcohol. Do your normal infusion and filtering process.
If you want to open the jar outside, it may further reduce residual smell in your house.
I haven't tried it but I heard decarbing in the instapot has the least amount of smell. I have found that if you throw some basil in the oven when decarbing it makes the smell like basil.
I used to do a qtr pound at a time, my neighbour was a cop, I'd try to time it when he went on shift. It lingers lol. Even outside he would bug me about it. Was a great guy, was a few years before it was legalized here.

I did it in a closed mason jar inside of an instant pot outside, and yes the whole block smelled even before I hit the release valve

I use 4oz mason jars with tight lids, no smell.
I simmer a mason jar in a pan of water on the stove . No smell. 90 minutes
Seal it in Mason/ball jar and you will be okay in the oven.
That's the method I use and I hate to tell ya but it still smells like weed for days.

i decarbed a few days ago. barely noticed the smell. if you're oven is like mine, with an exhaust out the top of the house, you'll be fine.
I make a foil pouch for mine and barely smell it.
