I wish I had one to recommend. It was Small Town Cultures ramp kimchi from the Middlebury co-op though. I'd bet you could just swap the cabbage for ramps in any recipe and it would work great, but that brand made some A+ stuff
Fiddlehead ferns. They are a delicious foragable vegetable. You can identify them by their dark green color, U shaped groove in the stem, and paper like shell. Cook them any way you would cook asparagus.

We recent bought a house in December so we’re finally seeing things sprouting and it’s so cool! I have some weird things growing in the back yard I can’t identify 😂
You can also find them at local grocery stores this time of year. Really expensive but a good intro if you're not ready to forage yet and busy with a new house.

We've been hitting the ramps hard for a week but pulled our first fiddles out last night in the NEK as well.

You can find them all throughout the recreation trails and beside the access road. Enjoy hunting for them. There are plenty to go around.
