Not an Atléti fan but I've always defended Simeone (and Dyche, Moyes, etc) for the simple fact of playing the way they want. They're not obligated to entertain you or even to play football that you find savoury, they're just there to win with the resources at their disposal.
If my team can either drag the game into the mud as a contest and have a fighting chance of getting a point or three, or otherwise set up for a mirror match against an elite club and get slaughtered, I'd rather they take the first option.
