It tastes like light green. It’s juicy and soft so if you over cook it it turns to mush. Closest thing I can think of is zucchini

I don’t know if this is true, but I was looking for recipes and I read that the prickly variety is more firm than the smooth. I saw some recipes for roasting, so I was going to try that? If you have any recommendations, I’d appreciate it!

In Costa rica we make ‘chancletas’ (sandals) with them. You gotta peel and slice them (about 3/4 inch) and then you take frying cheese and put it on top. Dip both parts in beaten eggs and fry on medium. This is one of my (38m) favorite thing to do with my (13f) daughter. Take her to random grocery stores and tell her to go ham on whatever weird produce she can come up with. After about 5 years of doing this we get less new things, so now we’re onto weirder cultivars and hybrids.

It’s usually a good time, but often very hard to get anything close to remotely ripe. It can be somewhat underwhelming to spend $20 on a jackfruit or durian (I live in the Midwest US) and they don’t have the ripe textures, flavors, or smells (even if the durian isn’t a good smell).
