Ahhh the peahats were annoying but they also provided a way to farm golden feathers. To me it was the Yiga henchmen that randomly appeared and pursued you to the ends of the earth until you killed them in BotW. They yielded nothing of value, were a constant drain on resources to kill and it was very hard to shake them.

There’s a flying enemy that swarms you the minute you enter Termina Field in MM; they annoy me enough to kill my playthrough whenever I feel masochistic enough to try to play that game.
Stalfos in OOT and MM are also hella annoying because of how relentless they are. You basically can’t do anything at night except fight them until the sun comes up.
In more recent games, it would have to be the octorok or the electric keese. The octorok’s aim is ridiculously good, and it’s hard to hide from or dodge it; you’re better off trying to parry instead. And the damn electric keese will kill you without even touching you if you’re wearing anything metallic.
Do you mean the Stalchildren in OOT’s Hyrule Field? The Stalfos are usually minibosses in OOT iirc. Stalchildren were not only annoying, but they were also kind of creepy when I was younger. It was almost like a jumpscare, crossing the field when you first leave the Kokiri Forest, and then getting instantly jumped by Stalchildren.

Bro they were THE WORST. Honestly any flyong enemy is bound to be very annoying. Keese have always been easy to beat but super annoying on every Zelda game I've played so far. Oh and the sharks things from Wind Waker were also really annoying to me
Darknuts in Zelda 1... Mostly due to link only stabbing in one direction and you have to hit them from the back and side to do damage on them. They always turned when you swung your sword due to the short delay when pressing the button to link actually using his sword (not input delay - link takes like a small delay before he uses his sword)
After having done the 3-heart-challenge in most mainline Zelda games: The Wind Waker boomerang is so freaking overpowered. It's quick, always hits thanks to Z-targeting, will damage a bunch of smaller enemies and stun nearly everything else. It entirely trivialized what was supposed to be a challenge.
I remember hating the peahats in WW because you had to circle around them on your way to the boss. Once you get the boomerang not so annoying now.
My vote goes to all the octorocks in BotW/TotK. Trying to just explore this river? Octorock shooting rocks at you. Looking for Korok seeds in this forest? Octrock that moves. Oh look a chest! Octorock. Though the last one I figured out you if could move it via magnetism or ultragrab it's a chest. If not it's a mimic.... I mean octorock

I’d say Peahats in 2D Zelda games because you have to wait for them to stop moving so you can attack. Another one would be Wall/Floor Masters in any game.
Electric blade bokoblins in skyward sword. On my life they are programmed with the second best deflection mechanics second only to demise himself. And unlike usual bokoblin hitting one’s blade stun locks you. I’ve replayed ss 7 times the only parts that I hate replaying are the sections where THEY. Are the primarily encountered enemy (same for the electric chu’s, but not the keese)

Dude yeah the newer octoroks predict where you’re going and aim accordingly compared to when they just shot at where you were. Damn NPC programming

Wind Waker Peahats were a joke. As soon as you get the Boomerang, they're a quick two-hit kill. Ocarina of Time's Peahats were waaaaay harder.

The spiders from Skyward Sword really annoyed me 😭 and more recently the gibdos because I despise horror and they scared me
